We use an unusual cultivation method for rock oysters!

"Mizu" is an exquisite rock oyster brought to you by Maruhachi in Itoshima City, Fukuoka Prefecture. These rock oysters are grown using single seeds, which is rare among rock oysters. Single seed farming is a farming method that takes care of each oyster and takes time to grow them, resulting in the most delicious taste.
It is extremely difficult to grow rock oysters with single seeds, and they are not widely available nationwide, making them extremely valuable.

Raw oysters in the shell from an oyster hut representing Itoshima City, Fukuoka Prefecture

Maruhachi's Itoshima oysters are raised in Funakoshi Bay, facing the Genkainada Sea, which is said to be one of the best fishing grounds in the world. Funakoshi Bay is a fertile sea fed by the Genkai Tsushima Warm Current and the Izumi River blessed by the sacred mountain Raizan of the Sefuri Mountains.
``Kaki House Maruhachi'' is an oyster shack that uses oysters grown there and is a representative oyster shack at Funakoshi Fishing Port in Itoshima City, Fukuoka Prefecture.
Be sure to try the rock oysters made by such a popular restaurant.

Taste and size of Mizuino (raw oysters in the shell)

Rock oysters grow more slowly than true oysters, so they grow larger than true oysters. It has thick flesh and a strong sweet taste, and its flavor does not deteriorate even in summer when the water temperature rises. Mizui is farmed using a method called single seed, which is rare for Iwaiwa oysters. By placing oysters in baskets and cultivating them near the sea surface, the oysters have a strong sweetness and a subtle salty taste that spreads in your mouth. The surface has a smooth texture, and when you bite into it, the meat pops out from the inside like a balloon.
