Scallops from Lake Saroma, Hokkaido
These scallops are grown in Lake Saroma, Japan's largest brackish water lake located in the center of the Sea of Okhotsk.
Lake Saroma is a mix of cold Okhotsk seawater and fresh water flowing from the rich land, creating an environment suitable for growing scallops.
They feed on plankton carried by drift ice and plankton from the earth, and store plenty of flavor components in the cold, clear seawater beneath the ice, developing into delicious scallops.
About scallops
Mr. Kaiyomaru's scallops start with seedlings in the spring, and the baskets are changed many times, and it takes about two and a half years to grow them until they are finally shipped.
Lake Saroma is rich in nutrients and has a low water temperature throughout the year, making it an ideal environment for scallops to grow.
The scallops grown in Lake Saroma are rich in umami and have a unique texture and sweetness.
